Gluten-free Carrot Apple Cake Recipe

Ingredients
  • 2 c apples, peeled, cored, & sliced .
  • 1 1/4 c oil .
  • 4 eggs .
  • 2 tsps baking powder .
  • 1 tsp baking soda .
  • 2 c granulated sugar .
  • 3 c carrots, grated .
  • 1 tsp salt .
  • 1/2 tsp xanthan gum .
  • 1 1/4 c rice flour .
  • 2 tsps cinnamon .
  • 1/4 c potato flour .
  • 1/2 c pecans, sliced

Directions
  • Step #1 Heat oven to 350°F.
  • Step #2 Beat eggs well slowly adding sugar until mixture is light & fluffy (about 5 mins).
  • Step #3 Add oil & beat until well incorporated.
  • Step #4 Sift the dry ingredients together & fold into the egg mixture.
  • Step #5 Grate carrots.
  • Step #6 Peel, core, & chop apples.
  • Step #7 Chop pecans.
  • Step #8 Fold in carrots, apples & nuts.
  • Step #9 Pour batter into a greased & floured 9x13" pan.
  • Step #10 Bake for 45 mins in the middle of the oven.
  • Step #11 Remove to wire rack & wait 15 mins before removing from pan.
  • Step #12 Cool completly & frost as desired.
