Ingredients
2 c apples, peeled, cored, & sliced .
1 1/4 c oil .
4 eggs .
2 tsps baking powder .
1 tsp baking soda .
2 c granulated sugar .
3 c carrots, grated .
1 tsp salt .
1/2 tsp xanthan gum .
1 1/4 c rice flour .
2 tsps cinnamon .
1/4 c potato flour .
1/2 c pecans, sliced
Directions
Step #1 Heat oven to 350°F.
Step #2 Beat eggs well slowly adding sugar until mixture is light & fluffy (about 5 mins).
Step #3 Add oil & beat until well incorporated.
Step #4 Sift the dry ingredients together & fold into the egg mixture.
Step #5 Grate carrots.
Step #6 Peel, core, & chop apples.
Step #7 Chop pecans.
Step #8 Fold in carrots, apples & nuts.
Step #9 Pour batter into a greased & floured 9x13" pan.
Step #10 Bake for 45 mins in the middle of the oven.
Step #11 Remove to wire rack & wait 15 mins before removing from pan.
Step #12 Cool completly & frost as desired.
