Babycake's Gluten-free Vegan Brownies Recipe

Ingredients
  • 1/2 c brewed coffee or hot water .
  • 1/4 tsp xanthan gum .
  • 2 tbsps pure vanilla extract .
  • 1 tsp salt .
  • 2 tbsps garfava flour (extra) .
  • 3/4 c garfava flour (mix of fava & garbanzo flours) .
  • 2 1/4 tsps baking powder .
  • 2 c vegan gluten-free chocolate chips (such as Tropical Source or Enjoy Life) .
  • 1/2 c canola oil, plus more for pans .
  • 1/4 c potato starch .
  • 1 c unrefined sugar (or 10 tbsps plus 2 tsps agave nectar) .
  • 2 tbsps arrowroot .
  • 1/4 tsp baking soda .
  • 1/2 c unsweetened applesauce .
  • 1/2 c unsweetened cocoa powder

Directions
  • Step #1 Preheat oven to 325°.
  • Step #2 Grease three 12-muffin mini-muffin pans with oil.
  • Step #3 In a medium bowl, potato starch, salt, baking powder, xanthan gum, whisk together flour, baking soda, arrowroot, sugar, & unsweetened cocoa powder; set aside.
  • Step #4 In a large bowl, mix together applesauce, 1/2 c canola oil, & vanilla.
  • Step #5 Slowly add flour mixture, stirring to mix.
  • Step #6 Stir in coffee until it forms a batter.
  • Step #7 Fold in chocolate chips.
  • Step #8 Place 1 tbsp batter into each greased muffin c.
  • Step #9 Bake until a toothpick inserted into the center comes out clean, approximately 12 to 15 mins.
  • Step #10 Let cool completely on a wire rack before removing from tins.
