Chicken Enchiladas Recipe

Ingredients
  • 1 (8 oz) carton sour cream .
  • 2 c cooked shredded chickens .
  • 2 c grated monterey jack cheese .
  • 1/2 tsp salt .
  • 2 1/2 c heavy cream .
  • 12 corn tortillas .
  • oil .
  • 6 chicken bouillon cubes .
  • 1 onion, very finely sliced .
  • 1 (7 oz) can green chili salsa .
  • 1 (4 oz) can sliced green chilies

Directions
  • Step #1 1.
  • Step #2 Preheat oven to 350.
  • Step #3 2.
  • Step #4 Combine chicken, green chilies, green salsa & onion.
  • Step #5 3.
  • Step #6 Place bouillon cubes, salt & cream in a saucepan & heat until bouillon is disolved-but do not boil.
  • Step #7 4.
  • Step #8 Heat oil in skillet & dip each tortilla into oil for about 5 seconds, just to soften.
  • Step #9 5.
  • Step #10 Drain on paper towels.
  • Step #11 6.
  • Step #12 Then dip each tortilla into saucepan with cream, coating each side.
  • Step #13 7.
  • Step #14 Fill each tortilla with chicken mixture.
  • Step #15 Roll & place seam side down in a baking dish.
  • Step #16 8.
  • Step #17 Pour remaining cream over enchiladas & sprinkle with cheese.
  • Step #18 9.
  • Step #19 Bake uncovered at 350 degrees for 30 to 35 mins.
  • Step #20 10.
  • Step #21 Serve with Sour Cream.
