Chinese "fried" Rice Noodles Recipe

Ingredients
  • 2 tbsps olive oil .
  • 3 garlic cloves .
  • 2 c sliced mushrooms, fresh .
  • 1 tsp ground ginger .
  • 1 pinch cajun seasoning .
  • 1 (10 oz) package rice vermicelli .
  • 1 carrot .
  • 1 (6 oz) can water chestnuts .
  • 1/2 c bottled sweet & sour sauce .
  • 4 tbsps soy sauce .
  • 1 pinch red pepper flakes (optional) .
  • 4 green onions

Directions
  • Step #1 Heat 5 or more c water in microwave until boiling (about 8 mins in a 600-watt microwave).
  • Step #2 Remove from microwave; add vermicelli to water.
  • Step #3 Allow to soak for 15-20 mins.
  • Step #4 Juliennne or thinly slice green onions, carrot, & garlic.
  • Step #5 Place in microwave-safe bowl & toss with sliced mushrooms & water chestnuts.
  • Step #6 Microwave for 7-9 mins on high, until tender.
  • Step #7 Pour some (not all) of the mushroom juice off & add sauces & seasonings to vegetable mixture.
  • Step #8 Return rice noodles to microwave, & cook on high about 7 mins.
