Chocolate Mocha Cake Recipe

Ingredients
  • 2 c all-purpose flour
  • 1 c buttermilk
  • 1 tbsp instant coffee powder
  • 2/3 c unsweetened cocoa powder
  • 1/2 c vegetable oil
  • 2 eggs
  • 2 c white sugar
  • 1 tsp baking powder
  • 2 tsps baking soda
  • 1 c hot water
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease two 9 inch round cake pans.
  • Step #3 Measure flour, baking powder, oil, buttermilk, sugar, cocoa, soda, eggs, & salt into a mixing bowl.
  • Step #4 Dissolve instant coffee in hot water, & add to mixing bowl.
  • Step #5 Beat at medium speed for 2 mins until smooth; batter will be thin.
  • Step #6 Pour into prepared pans.
  • Step #7 Bake for 30 to 35 mins, or until an inserted wooden pick comes out clean.
  • Step #8 Cool in pans for 10 mins, & then turn out onto racks to cool completely.
  • Step #9 Frost cooled cake with Coffee Icing.
  • Step #10 After frosting, melt some semisweet chocolate baking squares or chips in a double boiler.
  • Step #11 Drizzle chocolate around top outside edges letting it run down sides, or over top of cake.
