Chewy Apricot Coconut Bars (diabetic) Recipe

Ingredients
  • 5 tsps Splenda Sugar Blend for Baking .
  • 1/4 tsp salt .
  • 1 c coconut, finely sliced .
  • 1/3 c dried apricots, finely sliced .
  • 1/2 c sliced hazelnuts (optional) or almonds (optional) .
  • 2 egg whites .
  • 1/2 c margarine, melted .
  • 1 egg .
  • 1 tsp baking powder .
  • 1/2 c all-purpose flour .
  • 2 tbsps candied ginger, finely sliced .
  • 1/4 tsp almond flavoring .
  • 1 tsp vanilla

Directions
  • Step #1 Preheat oven 350 degrees.
  • Step #2 Using a mixer, beat eggs, Splenda & almond flavoring in medium bowl.
  • Step #3 Blend in in margarine & vanilla.
  • Step #4 Measure out the flour & mix 1 tbsp with the sliced apricots to get the fruit to separate into bits.
  • Step #5 Combine the rest of the flour with the baking powder & salt in small bowl.
  • Step #6 Stir into egg mixture.
  • Step #7 Fold in coconut, hazelnuts or almonds, & floured apricots.
  • Step #8 Spread batter evenly in greased 8-inch square baking pan.
  • Step #9 Bake until browned & toothpick inserted in center comes out clean, about 20 mins.
  • Step #10 Cool in pan on wire rack.
  • Step #11 Cut into squares.
