Jamie Oliver's Avocado, Pancetta & Pine Nut Salad Recipe

Ingredients
  • 6 avocados (ripe) .
  • salt & pepper .
  • 4 c baby spinach leaves (washed) .
  • balsamic vinegar .
  • extra virgin olive oil (good quality) .
  • 12 slices pancetta .
  • 50 g pine nuts

Directions
  • Step #1 Heat a frying pan & fry the pancetta until crispy.
  • Step #2 Remove from the pan & set aside.
  • Step #3 In the same pan, lightly toast the pine nuts.
  • Step #4 (This happens quickly, don't abandon them.
  • Step #5 ).
  • Step #6 Make your dressing by combining 1 tbsp olive oil & season this with salt & freshly ground black pepper.
  • Step #7 Taste to make sure your dressing is balanced; add a little more oil or vinegar if needed.
  • Step #8 On serving plates, lay out the avocado.
  • Step #9 Sprinkle top over the spinach leaves, pancetta & pine nuts.
  • Step #10 Spice up well with salt & freshly ground black pepper.
