Chicken And Rice Salad With Pine Nuts And Lemon Recipe

Ingredients
  • 1/4 c pine nuts .
  • salt & pepper .
  • 2 c long grain rice .
  • 1 1/2 tsps lemon zest .
  • 1 1/3 lbs boneless skinless chicken breasts .
  • 2 tbsps olive oil .
  • 1 1/2 c frozen peas .
  • 1/2 c olive oil, plus .
  • 3 tbsps fresh parsley, sliced .
  • 2 lemons, juice of .
  • 6 scallions, sliced

Directions
  • Step #1 In a small frying pan, toast the pine nuts over moderately low heat, stirring frequently until they are golden brown, about 5 mins.
  • Step #2 In a bowl, 1 tsp salt, whisk together the lemon juice, & ¼ tsp pepper.
  • Step #3 Add the oil slowly, whisking.
  • Step #4 Bring a large pot of salted water to a boil.
  • Step #5 Add the peas; cook this until just barley tender, about 3 mins.
  • Step #6 Using a slotted spoon or strainer, transfer to a large bowl.
  • Step #7 Add the rice to the water & cook this until tender, about 5 mins.
  • Step #8 Drain, return to the pot & cover to keep warm.
  • Step #9 Meanwhile, In a large-ish frying pan, bring ¼ inch of water to a simmer over moderately high heat.
  • Step #10 Sprinkle top the chicken with salt & pepper & add to the pan.
  • Step #11 Cover up, reduce the heat & let simmer, turning once, until cooked through, about 12 mins.
  • Step #12 Remove the chicken, let cool slightly, then cut into ½ inch chunks.
  • Step #13 Add the pine nuts, scallions, chicken, rice, parsley, lemon zest & dressing to the large bowl & carefully stir this to mix.
