Pepper Steak With Potatoes Recipe

Ingredients
  • 2 tbsps olive oil or canola oil (I used olive) .
  • 4 tsps cornstarch .
  • 1 medium green pepper, julienned (I also used red) .
  • 1 lb boneless beef top sirloin steaks, thinly sliced .
  • 1 small onion, sliced .
  • 1 garlic clove, minced .
  • pepper .
  • 5 medium red potatoes, cut into 1/4 inch slices .
  • 1 c beef broth (I used beef bullion granules dissolved in water)

Directions
  • Step #1 Place potatoes in a glass bowl & cover with water.
  • Step #2 Microwave for 10-15 mins or until tender.
  • Step #3 Meanwhile, in skillet, saute beef & garlic in oil until no longer pink.
  • Step #4 Remove & keep warm; drain drippings.
  • Step #5 In the same skillet, saute green pepper & onion until crisp tender.
  • Step #6 Return beef to the pan.
  • Step #7 Add potatoes & pepper, heat through.
  • Step #8 In a small saucepan, mix cornstarch & broth until smooth.
  • Step #9 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #10 Drizzle over meat mixture & toss to coat.
