Baba Ghannoush (arabic Dip) Recipe

Ingredients
  • 1 large eggplant .
  • 3 lemons, juice of .
  • salt (to taste) .
  • 2 crushed garlic cloves .
  • 2 tbsps sliced fresh parsley .
  • 1/2 c sesame, tahine (100% ground hulled sesame paste) .
  • 2 tbsps olive oil .
  • 1 tsp cumin

Directions
  • Step #1 Cut 1 inch slits in eggplant to prevent from splattering while baking.
  • Step #2 Bake eggplant at 500 degrees until tender or you can boil for 15-20 mins.
  • Step #3 Split eggplant open & scoop out the inside pulp together with the juice.
  • Step #4 Place pulp (with juice) in a food processor/blender & add all the above ingredients except olive oil & parsley.
  • Step #5 Blend for about 20 seconds or until you make a smooth & creamy Dip.
  • Step #6 You can add or salt or lemon juice if desired.
  • Step #7 Place Baba Ghannoush in a salad bowl & pour olive oil to cover the top.
  • Step #8 You can garnish with Parshley & tomato slices if desired.
  • Step #9 Baba Ghannoush is best served cold.
