Carrot Cake With Cream Cheese Frosting Recipe

Ingredients
  • Cream Cheese Frosting .
  • 3 c carrots, grated .
  • 1 c pecans, sliced .
  • 1/2 tsp salt .
  • 1 tsp baking powder .
  • 1 tsp ground cinnamon .
  • 4 eggs, well beaten .
  • 8 oz cream cheese, softened .
  • 16 oz powdered sugar .
  • 2 c flour .
  • 2 tsps baking soda .
  • 1/2 c butter, softened .
  • 1 tsp vanilla extract .
  • 1 1/2 c vegetable oil .
  • 1 tsp vanilla extract .
  • 2 c sugar

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Grease & flour three 9" cake pans.
  • Step #3 Combine first 7 ingredients (carrots, flour, baking powder, salt & cinnamon); stir in the eggs, sugar, baking soda, oil, & vanilla.
  • Step #4 Spoon batter into the 3 prepared pans; bake for 30 mins or until cakes test done.
  • Step #5 Spread with Cream Cheese Frosting (recipe follows) between layers while still warm.
  • Step #6 Cream Cheese Frosting:.
  • Step #7 Cream together powdered sugar, cream cheese, butter & vanilla until well mixed; sir in pecans.
  • Step #8 This is be enough icing to frost the tops of three 9" layer cakes.
