Ingredients
2 large carrots, sliced .
1 c beef broth .
cooking spray, 1 spray .
14 1/2 oz canned sliced tomatoes .
1 chipotle chile in adobo, sliced (optional) .
2 c mushrooms, sliced .
1 lb lean stewing beef .
1/2 tsp dried oregano .
1/4 tsp fresh ground pepper (or to taste) .
1 small onion, sliced .
1/2 tsp salt .
1/4 c sun-dried tomatoes (rinsed) .
2 large garlic cloves, minced .
15 oz cannellini beans, drained & rinsed .
1/4 tsp dried thyme
Directions
Step #1 Place the beef in your crock pot, on high heat.
Step #2 Add onion, mushrooms & garlic to a 12" non-stick skillet & saute over medium high heat for 5 mins, or until soft.
Step #3 Stir every once in awhile.
Step #4 Add to the crock pot.
Step #5 Add carrots.
Step #6 Place the beans in a mixer or food processor/blender, with the broth, & mix until pureed.
Step #7 Add to the crock pot.
Step #8 Add all remaining ingredients.
Step #9 Cover up & cook on high for 6-7 hrs.
Step #10 Garnish with fresh thyme.
