Chinese Steamed Buns With Bbq Pork Filling Recipe

Ingredients
  • 1 tbsp dark soy sauce
  • 1/3 c chicken broth
  • 1 tbsp vegetable oil
  • 1 tbsp white sugar
  • 1/2 c barbecue sauce
  • 1 recipe Chinese Steamed Buns
  • 1/2 lb boneless pork loin roast
  • 3 tbsps shallots, sliced

Directions
  • Step #1 Mix together pork, flour, oil, shallots, soy sauce, chicken stock, barbecue sauce, & sugar.
  • Step #2 Chill in refrigerator for at least 6 hrs.
  • Step #3 Prepare dough for Chinese Steamed Buns.
  • Step #4 Shape dough into balls.
  • Step #5 Roll each out into a circle, (like Won-Ton wrappers).
  • Step #6 Put 1 tbspful of prepared meat mixture in the center of each circle, & wrap dough around filling.
  • Step #7 Place seams down onto wax paper squares.
  • Step #8 Let stand until doubled, about 30 mins.
  • Step #9 Bring water to a boil in wok, & reduce heat to medium; the water should still be boiling.
  • Step #10 Place steam-plate on a small wire rack in the middle of the wok.
  • Step #11 Transfer as many buns on wax paper as will comfortably fit onto steam-plate leaving 1 to 2 inches between the buns.
  • Step #12 At least 2 inches space should be left between steam-plate & the wok.
  • Step #13 Cover wok with lid.
  • Step #14 Steam buns over boiling water for 15 to 20 mins.
  • Step #15 REMOVE LID BEFORE you turn off heat, or else water will drip back onto bun surface & produce yellowish "blisters" on bun surfaces.
  • Step #16 Continue steaming batches of buns until all are cooked.
