Ingredients
  • 4 1/2 oz whole wheat french bread, torn into 1-inch pieces (about 4 c) .
  • 1 1/2 tbsps sliced fresh basil .
  • 2 1/2 c sliced tomatoes .
  • 1/2 c vertically sliced red onions .
  • 2 tsps red wine vinegar .
  • 1/4 tsp fennel seeds .
  • 2 (6 oz) cans lump crabmeat, drained & picked over .
  • 1/4 tsp salt .
  • 2 tsps sliced fresh mint .
  • 1 1/2 tbsps extra virgin olive oil

Directions
  • Step #1 Combine the first 6 ingredients in a big bowl, stir with a whisk to mix.
  • Step #2 Add tomato, onion, bread, & crab; toss carefully to coat.
  • Step #3 Serve as soon as possible.
