Chilli Fried Tofu With Coconut Noodles Recipe

Ingredients
  • 2 large carrots, shredded .
  • 1 tbsp plain flour .
  • 250 g thin egg noodles .
  • 1 tsp mild chili powder .
  • 300F ml hot water .
  • 150 g tofu, cubed .
  • 90 g salted peanuts, sliced .
  • 4 tbsps Thai red curry paste .
  • 1 tsp caster sugar .
  • 1 tsp ground ginger .
  • 1/2 tsp ground turmeric .
  • 1 bunch spring onions, shredded .
  • 2 tbsps peanut oil .
  • 50 g creamed coconut

Directions
  • Step #1 Mix the flour, spices & sugar in a bowl.
  • Step #2 Use this mix to coat the tofu.
  • Step #3 Cook the noodles according to the packet.
  • Step #4 Drain & refresh under cold water.
  • Step #5 Heat 1 tbsp of the oil in a wok.
  • Step #6 Add the tofu & stir fry over a high heat for 3 mins Remove & set aside.
  • Step #7 Heat the remaining oil.
  • Step #8 Add the onions & carrots & stir fry for 2 mins Mix the coconut cream & hot water until smooth & add the curry paste.
  • Step #9 Add this to the pan & cook for 3 mins Add the tofu, peanuts & noodles & stir fry over a high heat for 2 mins until everything is mixed well & heated through.
