Chicken Wild Rice Soup Recipe

Ingredients
  • 1/2 tsp curry powder
  • 1/2 c sliced carrots
  • 2 c half-and-half
  • 3 tbsps dry sherry
  • 1 finely sliced onion
  • 1/2 tsp ground black pepper
  • 6 c chicken broth
  • 1/2 c sliced celery
  • 1/2 lb fresh sliced mushrooms
  • 1/2 tsp salt
  • 1 c slivered almonds
  • 3/4 c all-purpose flour
  • 1/2 tsp dried parsley
  • 1 lb boneless skinless chicken breasts, cooked & cubed
  • 1/2 c butter
  • 2 c cooked wild rice
  • 1/2 tsp mustard powder

Directions
  • Step #1 Melt butter in a large saucepan over med-heat/flame.
  • Step #2 Stir in the onion, celery & carrots & saute for 5 mins.
  • Step #3 Add the mushrooms & saute for 2 more mins.
  • Step #4 Then add the flour & stir well.
  • Step #5 Gradually pour in the chicken broth, stirring constantly, until all has been added.
  • Step #6 Bring just to a boil, reduce heat to low & let simmer.
  • Step #7 Next, ground black pepper, chicken, salt, parsley, curry powder, mustard powder, add the rice, almonds & sherry.
  • Step #8 Allow to heat through, then pour in the half-and-half.
  • Step #9 Let simmer for 1 to 2 hrs.
  • Step #10 (Note: Do not boil or your roux will break.
  • Step #11 ).
