Classic Carbonara With Pancetta Recipe

Ingredients
  • 3/4 c sliced Italian flat leaf parsley
  • 4 eggs, lightly beaten
  • 1/2 c pine nuts, toasted
  • 1 (16 oz) package penne pasta
  • 1/2 c freshly grated Parmesan cheese
  • 1 onion, sliced
  • 1 tsp black pepper
  • 1/2 lb sliced pancetta, sliced
  • 1 tbsp olive oil
  • 1/2 tsp ground nutmeg
  • 2 c heavy cream
  • 1 c freshly grated Parmesan cheese
  • 1/2 tsp salt

Directions
  • Step #1 Whisk together the eggs, cream, & 1 c of Parmesan cheese in a bowl.
  • Step #2 Blend thoroughly, & set aside.
  • Step #3 Bring a large pot of lightly salted water to a boil.
  • Step #4 Add the pasta, & cook this until al dente, or for 8 to 10 mins.
  • Step #5 Drain pasta, then return it to the pot (off of the heat), & cover to keep warm.
  • Step #6 Meanwhile, heat the olive oil over med-heat/flame in a large skillet; add the onion & cook this until transparent, about 8 mins.
  • Step #7 Remove onion from the skillet; place this in a bowl, & cover to keep warm.
  • Step #8 Using the same skillet, cook the pancetta over med-heat/flame until browned, tossing with nutmeg.
  • Step #9 Drain on paper towels.
  • Step #10 Combine the pasta, salt, pancetta, onion, pine nuts, & pepper in the same large skillet over low heat/flame.
  • Step #11 Slowly stir in the the egg-cream mixture, tossing carefully so the eggs don't scramble.
  • Step #12 Cook until just heated through.
  • Step #13 Remove from heat & toss with parsley & remaining 1/2 c Parmesan cheese.
  • Step #14 Serve as soon as possible.
