Creamy Tomato Soup Recipe

Ingredients
  • 1 bay leaf .
  • 4 c chicken stock .
  • 1 large onion, sliced fine .
  • salt, to taste .
  • 1 tsp marjoram .
  • 2 c cream or milk, depending on your preference .
  • 1 tsp sugar .
  • 1 tsp curry powder (or more) .
  • 2-4 tbsps flour .
  • 1 tsp paprika (or more) .
  • 2 small carrots, sliced fine .
  • 4 oz butter .
  • 2 (28 oz) cans sliced tomatoes, undrained .
  • 2 stalks celery, sliced fine .
  • 1 tsp dried basil .
  • 1/4 tsp white pepper

Directions
  • Step #1 Melt butter In a large-ish saucepan.
  • Step #2 Saute celery, carrots & onions in melted butter until tender.
  • Step #3 Stir in flour.
  • Step #4 Cook 2 mins, stirring constantly.
  • Step #5 Add the tomatoes, sugar, marjoram, basil, bay leaf & chicken stock.
  • Step #6 Simmer for 30 mins, stirring every once in awhile.
  • Step #7 Remove from heat & discard bay leaf.
  • Step #8 Puree well (in batches) in a food processor/blender or mixer, or use a thunderstick.
  • Step #9 Add all remaining ingredients & stir well.
  • Step #10 Reheat to serve hot, or put in the fridge & serve cold later.
  • Step #11 It also works at about room temp, but I like warm to hot best.
