Cream Of Potato Soupii Recipe

Ingredients
  • 1/8 tsp salt
  • ground black pepper to taste
  • 1 tbsp sliced onion
  • 1 c milk
  • 1 1/2 c chicken broth
  • 1/8 tsp dried dill weed
  • 1 tbsp unsalted butter
  • 4 potatoes - peeled & cubed
  • 1 tbsp all-purpose flour

Directions
  • Step #1 In a large pot over high heat, boil the potatoes in the broth for 15 mins, or until potatoes are tender.
  • Step #2 Carefully separate the potatoes from the broth & transfer to a mixer or food processor/blender.
  • Step #3 Add 3/4 c of the broth to the potatoes & puree for 5 seconds or more depending on how smooth you want the soup to be.
  • Step #4 Add remaining broth & set aside.
  • Step #5 Melt the butter in a large saucepan over med-heat/flame.
  • Step #6 Add the salt, onion & dill weed to the butter, ground black pepper, stir & saute for 2 mins.
  • Step #7 Sprinkle top with the flour & stir well.
  • Step #8 Pour in the milk & heat until the mixture starts to thicken, about 1 to 2 mins.
  • Step #9 Stir in the pureed potato mixture.
  • Step #10 Allow to heat through & serve.
