Creole Onion Soup Recipe

Ingredients
  • 1/4 c butter
  • 2 onions, thinly sliced
  • 1 c shredded Swiss cheese
  • 1/4 c spaghetti sauce
  • 1 (1 lb) loaf French bread
  • 1/4 c all-purpose flour
  • 2 (10.5 oz) cans beef broth
  • 1 c grated Parmesan cheese
  • 1/2 tsp Creole-style seasoning
  • 1/4 tsp ground black pepper
  • 2 tbsps soy sauce
  • 1/4 tsp garlic powder

Directions
  • Step #1 Slice the bread in thick slices & place on the rack in the oven.
  • Step #2 Heat oven to 325F degrees F (165 degrees C).
  • Step #3 Check bread periodically throughout following steps & remove this from oven when golden.
  • Step #4 In a saucepan over med-heat/flame, melt butter.
  • Step #5 Cook onion in butter, stirring, until golden, 15 mins.
  • Step #6 Sprinkle top flour, pepper, garlic powder & Creole seasoning over onion & continue to cook this until flour is golden brown as well.
  • Step #7 Stir in spaghetti sauce & soy sauce, cook 1 min more.
  • Step #8 Stir in beef broth & let simmer 10 mins, or until onions reach desired consistency.
  • Step #9 Place slices of bread in ovenproof bowls & top this with Swiss cheese.
  • Step #10 Ladle soup into bowls & top this with Parmesan.
  • Step #11 Place in oven until Parmesan melts.
  • Step #12 Serve at once.
