Ingredients
  • 3/4 c vegetable oil .
  • 1 c dried cherries or dates .
  • 1 1/2 c dried apricots, small dice .
  • 1 c dry-roasted & unsalted cashews .
  • 1 c dried cranberries .
  • 4 c old fashioned oats .
  • 2 c sliced almonds .
  • 1 c dried figs, small dice .
  • 1/2 c honey (be sure to use a really good honey) .
  • 2 c sweetened flaked coconut

Directions
  • Step #1 Preheat oven to 350F degrees.
  • Step #2 Toss the oats, coconut, & almonds together In a large-ish bowl.
  • Step #3 Whisk together the oil & honey in a small bowl.
  • Step #4 Pour the liquids over the oat mixture & stir with a wooden spoon until all the oats & nuts are coated.
  • Step #5 Pour onto a 13 x 18” baking sheet.
  • Step #6 Bake, stirring every once in awhile with a spatula, until the mixture turns a nice, even golden brown, about 45 mins.
  • Step #7 Remove the granola from the oven & allow this to cool, stirring frequently.
  • Step #8 Add the remaining ingredients.
  • Step #9 Store the cooled granola in an airtight container.
