Vegan Cheesecake #2 Recipe

Ingredients
  • fresh raspberries .
  • 1 tbsp all-purpose flour .
  • 1 tbsp light Karo syrup .
  • vegan chocolate syrup .
  • 1 tsp vanilla .
  • 16 graham cinnamon graham crackers, crumbled .
  • 1/2 c vegan margarine .
  • 1/3 c sugar .
  • 16 oz vegan cream cheese .
  • 1 lemon, juice of .
  • 4 Ener-G Egg Substitute

Directions
  • Step #1 Crust: Combine graham crackers, Karo syrup, margarine (adjust amount as needed), & flour in a bowl.
  • Step #2 Mix by hand & press firmly into a round pan.
  • Step #3 Filling: Combine "cream cheese", "eggs", vanilla, sugar, & lemon juice in a mixer & mix until creamy & smooth.
  • Step #4 Pour onto crust.
  • Step #5 Bake at 375 degrees Fahrenheit for 25-30 mins, until set (doesn't jiggle when you move the pan).
  • Step #6 Let cool.
  • Step #7 Place in refrigerator & chill for 12 hrs.
  • Step #8 Topping: You may use any kind of topping such as strawberries in syrup, chocolate, vegan whipped cream, etc.
