Pumpkin Hash Browns / Vegetarian Pumpkin Burgers Recipe

Ingredients
  • 4 spring onions or green shallots, trimmed & finely sliced .
  • 1 c whole wheat flour (Known as wholemeal plain flour in Australia) .
  • salt & pepper, to taste .
  • 30 g baby spinach leaves .
  • 60 g low-fat ricotta, fresh .
  • olive oil flavored cooking spray .
  • 500 g butternut pumpkin, peeled, deseeded & coarsely grated .
  • 3 eggs, lightly beaten .
  • Garnish .
  • 1 1/4 c cottage cheese .
  • 1 brown onion, coarsely grated

Directions
  • Step #1 Combine pumpkin, eggs, brown onion, cottage cheese, spring onions & wholemeal plain flour In a large-ish bowl.
  • Step #2 Spice up with salt & pepper.
  • Step #3 Heat a large non-stick frying pan over medium-high heat.
  • Step #4 Spray with oil.
  • Step #5 Shape 1/4 c quantities of pumpkin mixture into patties.
  • Step #6 Place around edge of pan, allowing room for them to expanding.
  • Step #7 Cook for 3 mins or until golden brown.
  • Step #8 Turn & cook for a further 2 - 3 mins or until golden.
  • Step #9 Transfer to a plate.
  • Step #10 Repeat last step until remaining pumpkin mixture is complete.
  • Step #11 To finish, arrange spinach on serving plates.
  • Step #12 Place two patties on each plate.
  • Step #13 Sprinkle top ricotta on top & serve.
