Chocolate Peanut Butter Layer Cake Recipe

Ingredients
  • 3 large eggs .
  • 3 tbsps heavy whipping cream .
  • 1/2 tsp baking powder .
  • 2 c sugar .
  • Chocolate Ganache .
  • 1 1/4 c cocoa .
  • 1 c semisweet chocolate morsels .
  • 1 1/4 c buttermilk .
  • Rich Chocolate frosting .
  • 3 tbsps milk .
  • 1/4 c confectioners' sugar .
  • 1 c butter, softened .
  • 4 c confectioners' sugar .
  • 3 tbsps heavy whipping cream .
  • 1 c peanut butter morsels .
  • sliced peanuts (optional) .
  • 1 1/4 c heavy whipping cream, divided .
  • 1/2 tsp salt .
  • 1/2 c chunky peanut butter .
  • 1 tsp vanilla extract .
  • 2 tsps baking soda .
  • 1 3/4 c cake flour .
  • 1 c butter, softened .
  • Peanut Butter Ganache .
  • Peanut Butter Mousse .
  • 1/4 c cocoa .
  • 1/2 c peanut butter morsels

Directions
  • Step #1 Preheat oven to 350°F Grease & flour 3 (9-inch) cake pans.
  • Step #2 In a large bowl,beat butter & sugar with electric mixer until fluffy.
  • Step #3 Beat in eggs, one at a time, beating well after each addition.
  • Step #4 In a medium bowl, cocoa, mix flour, baking soda, baking powder & salt; sift 2 times.
  • Step #5 Add sifted flour mixture to butter mixture alternately with buttermilk, beginning & ending with flour mixture.
  • Step #6 Stir in vanilla.
  • Step #7 Pour batter into prepared cake pans.
  • Step #8 Bake 33 to 38 min.
  • Step #9 Cool cake in pans on a wire rack 10 mins.
  • Step #10 Remove from pans & cool completely on wire rack.
  • Step #11 For chocolate ganache:.
  • Step #12 Combine morsels & cream in a small microwave-safe bowl.
  • Step #13 Microwave on high for 30 seconds; stir.
  • Step #14 Continue microwaving in 30 second intervals until mixture is smooth when stirred.
  • Step #15 Let cool 10 mins.
  • Step #16 For peanut butter mousse:.
  • Step #17 Combine morsels & 1/4 c cream in a microwave-safe bowl.
  • Step #18 Microwave on high for 30 seconds; stir.
  • Step #19 Continue microwaving in 30 second intervals until mixture is smooth when stirred.
  • Step #20 Stir in peanut butter; let cool.
  • Step #21 In a small bowl, beat remaining whipping cream with an electric mixer until thickened.
  • Step #22 Add confectioners sugar, 1 tbsp at a time, beating until stiff peaks form.
  • Step #23 Fold whipped cream into cooled peanut butter mixture.
  • Step #24 For rich chocolate frosting:.
  • Step #25 In a large bowl, beat butter with an electric mixer until creamy.
  • Step #26 Gradually beat in cocoa & confections sugar until smooth.
  • Step #27 Add milk, 1 tbsp at a time, beating after each addition, until desired consistency is reached.
  • Step #28 For peanut butter ganache:.
  • Step #29 Combine morsels & cream in a microwave-safe bowl.
  • Step #30 Microwave on high for 30 seconds; stir.
  • Step #31 Continue microwaving at 30 second intervals until mixture is smooth when stirred.
  • Step #32 Let cool slightly.
  • Step #33 Spread chocolate ganache evenly over each cake layer.
  • Step #34 Place 1 cake layer on a serving platter.
  • Step #35 Spread half of smooth peanut butter mousse on top of chocolate ganache, to within 1/2 inch of edges of cake.
  • Step #36 Top with another cake layer.
  • Step #37 Spread remaining smooth peanut butter mousse on top of ganache to within 1/2-inch of edges of cake.
  • Step #38 Top with final cake layer.
  • Step #39 Spread rich chocolate frosting over top & sides of cake.
  • Step #40 Drizzle with peanut butter ganache & garnish with peanuts, if desired.
