Spicy Broccoli And Soba Noodle Stir-fry Recipe

Step #1 Bring 3 quart water to boil In a large-ish pot.
Step #2 While water heats, whisk together soy sauce, sesame oil, sugar, cornstarch & vinegar until smooth & set aside.
Step #3 When water boils add soba noodles & cook 8-10 mins.
Step #4 Meanwhile, warm vegetable oil in a wok or large skillet over med-heat/flame.
Step #5 Add garlic & cayenne & cook, stirring constantly, until garlic turns golden (less than a min).
Step #6 Stir in broccoli, water & sake; cover & cook 3-4 min.
Step #7 Stir in carrots, tofu & soy sauce mixture; cook for another min or 2 until sauce thickens then reduce heat to low.
Step #8 When soba noodles are al dente, drain & rinse them.
Step #9 Add to the vegetables & stir until they are coated with sauce.
Step #10 Serve as soon as possible, garnished with sesame seeds.
