Babaganoush Recipe

Ingredients
  • 2 medium garlic cloves, minced .
  • 1/2 tsp salt .
  • cayenne, to taste .
  • black pepper, to taste .
  • 1/4 c fresh lemon juice .
  • 1/4 c tahini sauce .
  • olive oil .
  • 1 medium eggplant

Directions
  • Step #1 Preheat the oven to 350°F Lightly oil baking sheet.
  • Step #2 Slice the eggplant in half lengthwise, & place face-down on the baking sheet.
  • Step #3 Bake for 30 mins or until very tender.
  • Step #4 Cool to the touch.
  • Step #5 Scoop out the eggplant insides, & discard the skin.
  • Step #6 Place the insides in a food processor/blender, & add the garlic, lemon juice, tahini & salt.
  • Step #7 Puree until smooth.
  • Step #8 Transfer to a serving dish, cover tightly, & chill in the fridge.
  • Step #9 Drizzle the top this with a little olive oil just before serving.
  • Step #10 Serve with an assortment of crackers.
