Spicy Scallops With Shredded Vegetables Recipe

Ingredients
  • 1/4 tsp salt .
  • 1 tsp cornstarch .
  • 1 red bell pepper, seeded & cut into 1/4 inch strips .
  • 3/4 c chicken broth .
  • 2 tbsps cornstarch .
  • 4 tsps vegetable oil .
  • 2 carrots, cut into 1/4 inch matchsticks .
  • 1 tbsp fresh ginger, minced .
  • 3 garlic cloves, minced .
  • 1/2 tsp red pepper flakes .
  • 8 oz snow peas, cut into 1/4 inch strips .
  • 1 lb scallops .
  • 3 scallions, cut into 2 inch lengths

Directions
  • Step #1 Dredge the scallops in 2 tbsps of the cornstarch, shaking off the excess.
  • Step #2 In a large skillet, heat 2 tsps of the oil over moderately high heat.
  • Step #3 Add the scallops & stir-fry for 2 mins or until lightly golden.
  • Step #4 Transfer scallops to a plate & set aside.
  • Step #5 Add the remaining 2 tsps of oil to the skillet along with the vegetables, ginger & garlic.
  • Step #6 Stir-fry for 2 mins or until crisp-tender.
  • Step #7 In a small bowl, whisk the broth, red pepper flakes & salt into the remaining 1 tsp of cornstarch.
  • Step #8 Pour into the skillet, bring to a boil, & boil for 1 min.
  • Step #9 Reduce heat to a simmer, return the scallops to the pan & cook this until just heated through.
  • Step #10 Serve hot.
