Czech Roast Pork Recipe

Ingredients
  • 2 tsps ground black pepper
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • 1 tbsp cornstarch
  • 1/2 c beer
  • 2 tbsps butter
  • 3 medium onions, sliced
  • 5 lbs pork shoulder roast
  • 2 tbsps vegetable oil
  • 2 tbsps caraway seeds
  • 1 tbsp prepared mustard

Directions
  • Step #1 In a bowl, garlic powder, salt, caraway seeds, mustard, form a paste using the vegetable oil, & pepper.
  • Step #2 Rub over the pork roast, & let sit about 30 mins.
  • Step #3 Preheat oven to 350 degrees F (175 degrees C).
  • Step #4 Arrange the onions in the bottom of a large roasting pan.
  • Step #5 Pour in the beer.
  • Step #6 Place the roast, fat side down, on top of the onions.
  • Step #7 Cover the pan with foil.
  • Step #8 Roast 1 hr in the preheated oven.
  • Step #9 Remove foil, turn roast, & score the fat.
  • Step #10 Continue roasting 2 1/2 hrs, or to a minimum internal temperature of 160 degrees F (70 degrees C).
  • Step #11 Remove from heat, reserving pan juices, & let sit about 20 mins before slicing thinly.
  • Step #12 In a saucepan, bring the reserved pan juices to a boil.
  • Step #13 Mix in the butter & cornstarch to thicken, reduce heat, & let simmer 5 to 10 mins.
  • Step #14 Serve with the sliced pork.
