Crumb Topped Scallops Recipe

Ingredients
  • 1 tsp dried parsley flakes
  • 1 tbsp butter, melted
  • 1/8 tsp garlic powder
  • 1/8 tsp pepper
  • 1/4 c dry bread crumbs
  • 1 tbsp white wine or chicken broth
  • 1/4 tsp dried thyme
  • Lemon wedges
  • 1/8 tsp seasoned salt
  • 1 1/2 tsps lemon juice
  • 1 lb sea scallops
  • 6 fresh mushrooms, quartered

Directions
  • Step #1 In a small bowl, mix bread crumbs, butter & parsley; set aside.
  • Step #2 Place scallops & mushrooms in a 9-in.
  • Step #3 microwave-safe pie plate.
  • Step #4 Combine wine or broth, lemon juice & seasonings; pour over scallop mixture.
  • Step #5 Cover & microwave at 50% power for 2 mins; drain.
  • Step #6 Sprinkle top with crumb mixture.
  • Step #7 Cover & microwave at 50% power 4-1/2 mins longer or until scallops are opaque, stirring once.
  • Step #8 Serve with lemon if desired.
