Czech Kolache Recipe

Ingredients
  • 1 c raisins
  • 1/8 tsp salt
  • 1 c warm milk (110 degrees F/45 degrees C)
  • 1 tsp salt
  • 1/2 c melted shortening
  • 2 c sifted all-purpose flour
  • 3 1/2 c all-purpose flour
  • 2 (.25 oz) packages active dry yeast
  • 2 eggs
  • 2 tbsps all-purpose flour
  • 1/2 c warm water
  • 3 tbsps white sugar
  • 2 c cottage cheese
  • 1/2 c white sugar
  • 2 egg yolks

Directions
  • Step #1 Pour yeast into 1/2 c of lukewarm water.
  • Step #2 Set aside to soak.
  • Step #3 In a separate bowl mix together 1 c milk, 1/2 c sugar, 1 tsp salt.
  • Step #4 Add 1/2 c melted shortening & 2 c sifted flour.
  • Step #5 Beat well.
  • Step #6 Add in 2 beaten eggs & yeast mixture & mix well.
  • Step #7 Set aside to rest until bubbly & spongy.
  • Step #8 Add 3 1/2 c of flour & mix well.
  • Step #9 Set aside to rise for 1 hr.
  • Step #10 Punch down & let rise again for 1 hr.
  • Step #11 To Make Filling: Beat together 2 egg yolks, 3 tbsps sugar, 1/8 tsp salt, 2 tbsps flour & 1 c of raisins.
  • Step #12 Add cottage cheese & mix well.
  • Step #13 Pinch off 1 inch balls from dough & press an indentation in the center of each.
  • Step #14 Put filling in.
  • Step #15 Let rise 15 mins, then bake this at 425F degrees F (220 degrees C) until golden - 12-18 mins.
