Greek Orzo-feta Salad Recipe

Ingredients
  • all-purpose seasoning .
  • 15 Greek olives .
  • 4 oz orzo pasta .
  • 2 oz feta, crumbled .
  • 3 c baby spinach leaves .
  • 2 small tomatoes, sliced .
  • 2 tbsps balsamic vinegar .
  • 1 red onion, sliced .
  • 3 tsps light Italian dressing .
  • 1 tbsp olive oil

Directions
  • Step #1 Cook the pasta until it is al dente & drain.
  • Step #2 In a large bowl, mix hot pasta & spinach leaves.
  • Step #3 They will wilt.
  • Step #4 Add sliced olives, tomatoes, onions, & feta.
  • Step #5 Dress with olive oil, Italian dressing, balsamic vinegar, & seasoning to taste.
  • Step #6 Refrigerate until chilled, about 2 hrs.
