Cannellini Beans With Rosemary Recipe

Ingredients
  • 1/2 c tomatoes, sliced .
  • 1 tsp orange juice .
  • 1/4 c reduced-sodium vegetable broth .
  • 1/4 c onions, sliced .
  • 1/2 c green bell peppers, sliced .
  • 1 tsp fresh rosemary, sliced .
  • 1 garlic clove, minced .
  • 1 tsp orange peel, grated .
  • 1/8 tsp black pepper, ground .
  • 1 (19 oz) can cannellini beans, rinsed & drained .
  • 2 tsps olive oil

Directions
  • Step #1 In a large non-stick skillet over med-heat/flame, warm the oil.
  • Step #2 Add the green peppers, & garlic, onion, & saute for 4 mins or until the peppers are soft.
  • Step #3 Add the beans, broth, orange juice, orange peel, tomatoes, & rosemary.
  • Step #4 Reduce heat to low, cover & cook for 10 mins.
  • Step #5 Uncover, sprinkle with black pepper, & cook stirring every once in awhile for about 4 mins.
