Carrot Cake With Cream Cheese Frosting - Gluten Free Recipe

Ingredients
  • 30 g butter .
  • 2 tsps orange juice .
  • 3 eggs .
  • 2 tsps ground cinnamon .
  • 1 c oil .
  • 125 g cream cheese, softened .
  • 1 2/3 c grated carrots .
  • 1 1/4 c brown sugar .
  • 1 tsp bicarbonate of soda .
  • 3/4 c pecans, sliced .
  • Cake Ingredients .
  • 1 1/2 c gluten-free self-raising flour .
  • ICING INGREDIENTS .
  • 1 pinch salt .
  • 1 c gluten-free icing sugar, ensure gluten free (confectioners sugar)

Directions
  • Step #1 Preheat the oven to 180°C (350°F )Grease a deep 23cm square cake tin & line the base & sides with baking paper.
  • Step #2 Combine the eggs, oil & brown sugar In a large-ish bowl.
  • Step #3 Add the sifted flour, soda, salt & cinnamon.
  • Step #4 Beat with electric beaters until the mixture is smooth.
  • Step #5 Add the nuts & carrots & mix through well.
  • Step #6 Pour the mixture into the prepared tin & bake for 45 mins.
  • Step #7 A skewer should come out clean when inserted into the centre of the cake.
  • Step #8 Allow the cake to rest in the tin for 20 mins before turning out onto a wire rack to cool.
  • Step #9 To make the frosting.
  • Step #10 Beat the cream cheese, butter, icing sugar & orange juice until the mixture is smooth & spreadable.
  • Step #11 Spread the icing over the cake.
  • Step #12 Decorate the cake with some extra sliced pecans or some orange or lemon zest if desired.
