Ginger-carrot Soup Recipe

Ingredients
  • ground pepper .
  • 4 c water .
  • 2 medium onions, sliced .
  • 2-3 tsps fresh lemon juice (1 lemon) .
  • 2 tbsps fresh ginger, peeled & finely sliced .
  • coarse salt .
  • 1/4 c heavy cream (optional) .
  • 2 (14 1/2 oz) cans reduced-sodium chicken broth .
  • 1 1/2 lbs sweet potatoes, peeled & sliced .
  • 2-3 tsps sugar .
  • 2 tbsps olive oil .
  • 2 lbs carrots, sliced

Directions
  • Step #1 Heat oil In a large-ish saucepan over med-heat/flame.
  • Step #2 Add onions, stirring every once in awhile until they are translucent (5 mins).
  • Step #3 Add carrots, sweet potatoes, ginger, broth & water.
  • Step #4 Bring to a boil, then reduce to a simmer & cook this until vegetables are tender (20 mins).
  • Step #5 Puree mixture in batches in a mixer until smooth.
  • Step #6 (for safety, you should let the soup cool a bit before doing this, & be careful of any splattering.
  • Step #7 Or use an immersion mixer right in the pot).
  • Step #8 Add sugar, lemon juice, salt & pepper to taste.
  • Step #9 Return to pan & reheat over med-heat/flame, adding in cream if you wish.
