Avial (keralan Mixed Vegetables) Recipe

Ingredients
  • 1/4 c carrots, sliced .
  • 1 c cucumbers, sliced .
  • 1/2 tsp turmeric powder .
  • 2 drumsticks (vegetable), sliced .
  • 5 green chilies .
  • 2 sprigs curry leaves .
  • 1 c yams, sliced .
  • 1 raw banana, sliced .
  • 1/2 fresh coconut, grated .
  • 1 c snake gourd, sliced .
  • 1/2 tsp cumin seeds .
  • 1/8 c raw green mangoes, cut in 4 cubes (for sourness) .
  • 2 tsps salt .
  • 1/2 c long runner beans, sliced .
  • 3 c coconut oil

Directions
  • Step #1 Coarsely grind the coconut, green chillies & cumin seeds.
  • Step #2 Keep it aside.
  • Step #3 Clean the vegetables.
  • Step #4 Heat 2 tbsps of coconut oil in a thick bottomed vessel.
  • Step #5 Add the vegetables & cook on a low flame.
  • Step #6 Do not add water.
  • Step #7 When it is done, add turmeric powder, salt & mix it well.
  • Step #8 Remove the vegetables from the middle & put sliced bananas & mango pieces & cover it with the other vegetables.
  • Step #9 When the steam comes out, add the coconut paste & stir well.
  • Step #10 Remove from fire.
  • Step #11 Mix the remaining coconut oil & curry leaves in the avial.
  • Step #12 Serve with rice.
