Lightened Up Strawberry Rhubarb Crumble Recipe

Ingredients
  • 1/2 c rhubarb, sliced to 1/2 inch thick slices .
  • 2 tbsps unsalted butter, cold & sliced .
  • 2 tbsps Splenda sugar substitute .
  • 2 tbsps Splenda sugar substitute .
  • 1 pinch salt .
  • 2 tsps tapioca flour .
  • 1 pinch ground cloves .
  • 1 c strawberries, halved .
  • 3 tbsps cornmeal .
  • 1 pinch salt

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Lightly grease two 1- to 1 1/2 c oven proof bowls or ramikins & set aside.
  • Step #3 Make the filling: Place fruit, suger, flour, cloves & salt into a med.
  • Step #4 mixing bowl & toss to mix well.
  • Step #5 Spoon mixture into prepared dishes, dividing evenly.
  • Step #6 Make the topping:Place flour sugar & salt in small bowl & mix well.
  • Step #7 Add butter pieces & toss to coat the butter with the flour mixture.
  • Step #8 Rub the mixture with your fingertips until you have coarse crumbs.
  • Step #9 There is no lose flour & the mixture looks pale yellow.
  • Step #10 Spoon evenly over filling.
  • Step #11 Bake until topping is pale gold & fuit filling is bubbling, 30 min Remove dishes from oven & let cool on a rack for 10- 15 min Serve warm or at about room temp with icecream or topping of your choice.
