Ingredients
4 spring onions, finely sliced .
1 tsp wasabi paste .
7 fluid oz mirin .
1 1/4 oz bonito flakes, see note .
3 c water .
Sauce .
14 oz dried soba noodles .
7 fluid oz shoyu .
1 sheet nori (4 inches)
Directions
Step #1 Note: the recipes calls for kezuri-bushi but the zaar computer likes the name bonito flakes better.
Step #2 Mix all the sauce in a pan & boil over high for 2 mins.
Step #3 Reduce to medium heat & cook 2 more mins.
Step #4 Strain through muslin.
Step #5 Cool.
Step #6 Chill.
Step #7 soak onions in ice cold water for 5 mins then squeeze out excess water.
Step #8 Toast nori over med flame until dry & crisp then cut into 1/8 inch wide strips with a sissor.
Step #9 Heat 9 c water in large pan.
Step #10 it should NOT be more than 2/3 pan's depth.
Step #11 Bring to boil & add soba.
Step #12 Distribute evenly & stir to prevent sticking.
Step #13 When it is bubbling pour 1/4 c cold water in to lower temperature.
Step #14 Repeat & cook for time stated on your soba package.
Step #15 If no time is stated use 5 mins.
Step #16 Test the noodle.
Step #17 You should be able to cut it with your finger.
Step #18 It should be tender.
Step #19 Put large sieve under cold running water & pour soba in then wash with hands.
Step #20 Rub well to remove starch.
Step #21 It should feel slightly elastic.
Step #22 Drain again.
Step #23 Pour dipping sauce into 4 c Put wasabi & onions on individual serving dishes for guests.
Step #24 Divide soba between 4 plates.
Step #25 Sprinkle top with nori strips & serve cold with sauce, wasabi & onions.
Step #26 Have each guest mix the wasabi & onions into sauce To eat hold the sauce c in one hand.
Step #27 Pick up noodles using chopsticks [right.
Step #28 I use a fork] & dip in end of dipping sauce.
Step #29 Slurp in noodles with lips.
Step #30 YOu can also use yuzu, fine grated radish, lime rind, thin sliced garlic or fresh grated ginger root with the wasabi & onions or in place of.
