Ww 4 Points Marinated Portobello Feta Salad Recipe

Ingredients
  • 1 1/2 lbs portabella mushrooms, stems removed .
  • 1 tbsp sliced fresh basil .
  • 2 tsps olive oil .
  • 4 oz feta cheese, crumbled .
  • 1 tbsp sliced shallots or onions .
  • 2 tbsps honey mustard .
  • 1 small garlic clove .
  • 8 c mixed baby greens .
  • 2 tsps red wine vinegar .
  • 1/2 tbsp maple syrup

Directions
  • Step #1 Preheat broiler.
  • Step #2 In a food processor/blender or mixer, vinegar, badil, maple syrup, shallots/onion, mix mustard, oil & garlic.
  • Step #3 Place msuhrooms in a baking pan, stem-side up, pour dressing over each.
  • Step #4 Broil until tender, about 5-7 mins.
  • Step #5 Remove from oven & slice.
  • Step #6 Place 2 Celsius baby greens on each plate.
  • Step #7 Top with 1 sliced mushroom & 1 oz.
  • Step #8 crumbled feta cheese.
