Island Yum-yum Chicken Recipe

Ingredients
  • 2 tbsps breadcrumbs .
  • 1/2 tsp rosemary .
  • 1 tbsp sugar .
  • gravy .
  • 1/2 tsp powdered cloves .
  • 2 eggs (beaten) .
  • 1 green pepper (sliced) .
  • 1 tsp oregano .
  • 2 lbs chicken pieces .
  • 1 tsp garlic powder .
  • 1/2 tsp pepper .
  • 1 1/2 c breadcrumbs .
  • 1/4 tsp pepper .
  • 1 tsp paprika .
  • 1 onion .
  • 1 tbsp oil .
  • 1/2 c chicken stock or water .
  • 1/4 tsp paprika .
  • 1/2 tsp celery salt .
  • 1 tbsp vinegar .
  • 1/2 c vinegar or lemon juice .
  • 2 tbsps soy sauce .
  • 1/4 tsp salt

Directions
  • Step #1 Prepare chicken, wash & rinse with lemon or vinegar.
  • Step #2 Spice up with soy sauce & garlic, pepper, paprika, cloves, celery salt, oregano, & rosemary.
  • Step #3 Marinade for 2 to 6 hrs.
  • Step #4 Coat chicken in beaten egg & dredge in breadcrumbs.
  • Step #5 Place chicken on greased baking sheet.
  • Step #6 Put a speck of butter or margerine on each piece of chicken.
  • Step #7 Bake at 350 for an hr or until juices run clear.
  • Step #8 When chicken is done prepare the gravy.
  • Step #9 Heat 1 tbsp of cooking oil.
  • Step #10 Sautee onion & peppers.
  • Step #11 Add drippings from chicken.
  • Step #12 stir in the 2 tbsp of breadcrumbs, sugar, vinegar, salt, pepper & stock or water.
  • Step #13 Serve baked chicken with gravy on top.
  • Step #14 This is a great meal with some roasted potatoes & a fresh green salad.
