Pressure Cooker Italian Beef Stew Recipe

Ingredients
  • salt (to your taste) .
  • 1 bay leaf .
  • 1 garlic clove, minced .
  • 1 lb white mushrooms or baby portabello mushrooms, cleaned & cut into quarters .
  • 1 lb fresh green string beans, cleaned & cut into bite sized pieces (can use frozen, cut green beans) .
  • 3-4 tbsps olive oil (or oil of choice) .
  • 5 large peeled potatoes, cut in half, then quarter each half .
  • pepper (to your taste) .
  • 4-6 carrots, cut into 1 inch pieces (about 1 lb) .
  • 1/4 tsp dried basil, crushed (optional) .
  • 1 (28 oz) can crushed italian plum tomatoes with liquid (or two 14 oz cans of tomato sauce) .
  • 1 medium onion, sliced .
  • 1 1/2-2 c boiling water .
  • 1/4 tsp dried oregano, crushed (optional) .
  • 1/2 c dry red wine .
  • 2 lbs lean beef or veal, cut into cubes (or 1 lb of each)

Directions
  • Step #1 I browned the meat with oil & onions in my PC, you can use a separate pan for browning if you prefer.
  • Step #2 Add the mushrooms & garlic, & let cook this until the mushrooms release their liquid.
  • Step #3 Add the tomato sauce, wine, bay leaf & all seasonings EXCEPT salt.
  • Step #4 Add a bit of water, maybe 1 1/2 to 2 c (to bring ingredient level to just over 1/3 capacity of my PC).
  • Step #5 Secure lid, bring to HIGH pressure & cook for 18-20 mins.
  • Step #6 Let pressure release NATURALLY (it took about 15-18 mins in my PC).
  • Step #7 Add potatoes & carrots, give all a good stir.
  • Step #8 Secure lid again & bring to HIGH pressure, cook veggies for 4 mins.
  • Step #9 Quickly release pressure (with quick release valve) & test carrots & potatoes for doneness (they should still be a bit too firm).
  • Step #10 Add the green beans & give all a good stir.
  • Step #11 Secure lid & bring the PC up to LOW pressure, & cook for 2 mins.
  • Step #12 Remove from stove, quick release pressure (with quick release valve), removed lid & give the stew a stir.
  • Step #13 Carefully (very hot!) sample it, adjust seasonings to taste (I added a bit of salt).
  • Step #14 If stew is too thick, add a bit of water to thin to desired consistency.
  • Step #15 If stew is too thin, let this stand for 5-10 mins before serving.
