Mushroom Stuffed Onions--midwest Recipe

Ingredients
  • 4 tbsps butter, divided .
  • 3 tbsps flour, divided .
  • paprika .
  • 6 onions, cases .
  • toast, if desired .
  • salt .
  • 1 1/2 c sliced mushrooms .
  • grated cheese, if desired .
  • parsley, if desired .
  • 1 1/3 c milk or light cream, divided .
  • breadcrumbs, if desired .
  • worcestershire sauce or dry sherry

Directions
  • Step #1 To make onion cases: peel 6 medium or 3 large onions.
  • Step #2 Boil/simmer until tender.
  • Step #3 Remove from water & cool.
  • Step #4 If using medium onions, cut a slice from the top & hollow out, leaving a 3/4-inch shell.
  • Step #5 (Hint: use kitchen scissors).
  • Step #6 If using large onions, cut in half (doesn't matter whether horizontally or vertically).
  • Step #7 Remove the centers, leaving a 3/4-inch shell.
  • Step #8 Chop the centers.
  • Step #9 Preheat oven to 400F degrees F.
  • Step #10 Saute the sliced mushrooms in 2 T of the butter until tender; sprinkle with 1 T of the flour & mix.
  • Step #11 Stir in 1/3 C milk or cream & stir until thickened.
  • Step #12 Spice up with salt & lots of paprika.
  • Step #13 Fill the onion cases with mushroom mixture.
  • Step #14 Make white sauce by melting 2 T butter; stir in the 2 T flour until mixed.
  • Step #15 Slowly stir in the 1 C milk or cream; stir until thickened.
  • Step #16 Add the sliced onion centers & any of the mushroom mixture that didn't fit in the onion cases.
  • Step #17 Spice up the sauce well with salt, paprika, & worchestershire sauce or sherry.
  • Step #18 Pour the seasoned white sauce into a shallow baking dish.
  • Step #19 Add the stuffed onion cases, stuffing side up.
  • Step #20 The tops may be sprinkled with bread crumbs dotted with butter or sprinkled with cheese -- or not.
  • Step #21 Bake the onions until they are well-heated.
  • Step #22 Garnish with parsley.
  • Step #23 They may be served on toast.
  • Step #24 For Vegetarian do not use Worchestershire sauce option use the Sherry or use a Vegetarian Worchestershire Sauce.
