Crunchy Wasabi Salmon With Lime Recipe

Ingredients
  • 1 tsp sugar .
  • 1 shallot, finely sliced .
  • 1 tbsp finely grated lime peel .
  • 3 tsps red curry paste .
  • 3 tbsps fresh coriander leaves, sliced .
  • 4 (8 oz) salmon fillets .
  • 1 tbsp olive oil or cooking spray .
  • For the mayonnaise .
  • 1/2 c sour cream .
  • 2 tbsps fresh lime rind, grated .
  • 2 tbsps lime juice .
  • 1/2 c mayonnaise .
  • 3/4 c wasabi peas

Directions
  • Step #1 Combine all ingredients for the spicy mayonnaise very well.
  • Step #2 Chill while you make the salmon.
  • Step #3 Preheat oven to 400°F.
  • Step #4 Blend wasabi peas in a mini-chopper until ground but some coarsely crushed pieces.
  • Step #5 Lightly spray oil a rimmed baking sheet, & arrange salmon on top.
  • Step #6 Sprinkle top fish with salt.
  • Step #7 Press ground wasabi peas onto top of the fish, covering the tops completely.
  • Step #8 Sprinkle top the grated lime peel over the salmon & drizzle with 1 tbsp oil, or spray with spray oil.
  • Step #9 Roast salmon until just opaque in center, about 10 mins.
  • Step #10 Roasting time will vary depending on the thickness of your fillets.
  • Step #11 Just check the fish for doneness.
  • Step #12 I would serve the salmon on a bed of red cabbage with snow peas on the side.
  • Step #13 Mayonnaise for dipping.
