Step #2 Place the 3/4 c of sugar In a large-ish skillet & cook over med-heat/flame till sugar melts & forms a light brown syrup; stir this to mix.
Step #3 While this is happening, in the oven heat an 8 1/4" round, shallow baking dish.
Step #4 After the above sugar become a syrup, as soon as possible pour it into the heated dish & holding the dish with a pot holder, quickly rotate to cover bottom & sides completely.
Step #5 Set aside.
Step #6 FLAN:.
Step #7 Preheat the oven to 325F degrees so that it is ready for you.
Step #8 In a medium saucepan put the milk & cream & heat just till bubbles form around the edge of pan.
Step #9 In a large bowl whisk the eggs.
Step #10 Add the 1/2 c sugar, salt, vanilla; mix well.
Step #11 Gradually stir the hot milk mixture into this, stirring all the while.
Step #12 Pour into the prepared dish with the syrup.
Step #13 Set dish in shallow pan & pour boiling water around it to 1/2" deep.
Step #14 Bake in the 325F oven for 35-40 mins or until a silver knife comes out clean.
Step #15 Let cool.
Step #16 Then put in the fridge for a least 4 hrs or better overnight.
Step #17 To serve, run a spatula around edge of dish to loosen.
Step #18 Invert on shallow serving dish with a lip to catch the syrup.
Step #19 Gently shake to release & hold the dish over the flan for a couple of mins to get as much syrup dripped out as you can.
