Ingredients
2 lbs country-style pork ribs, cut into large chunks .
3 tbsps butter, oil or ghee .
2 tsps turmeric .
2 tsps ground coriander .
1 pinch salt & pepper .
1 1/4 c coconut milk .
2 onions, sliced finely .
1/4 tsp ground ginger .
1 pinch cayenne .
3 small red potatoes, cut into large bite sized pieces (optional) .
2 tsps chili powder, not ground red pepper .
1 tsp lemon juice .
3 garlic cloves, sliced .
1 1/4 c beef stock or bouillon
Directions
Step #1 Mix together all the spices & add a few spoonfuls of coconut milk, enough to make a thin paste.
Step #2 Add enough cayenne to make it fairly hot; enough to give spicy heat to all the meat & onions.
Step #3 Heat the oil or butter, etc.
Step #4 & cook the onions & garlic until lightly browned.
Step #5 Add the paste & continue frying for a couple mins.
Step #6 Add the meat & stir this to cover with the paste & brown a bit.
Step #7 Add the beef broth, bring to a boil, then cover & let simmer carefully until the meat is very tender - at least 2 hrs.
Step #8 Add the optional potatoes when the meat is tender & continue cooking until the potatoes are done.
Step #9 Stir in the remaining coconut milk & the lemon juice & continue simmering for 10 mins until thickened a bit.
Step #10 Serve over any type of Indian style boiled rice.
