Slow Cooker Steak Fajitas Recipe

Ingredients
  • 1 (1 lb) beef flank steak .
  • extra salsa .
  • flour tortillas, warmed .
  • 1 tbsp chili powder .
  • 1 small red bell pepper, cut into strips .
  • 2 garlic cloves, minced .
  • 1 tsp ground cumin .
  • 2 tbsps sliced fresh cilantro .
  • 2 tbsps fresh lime juice .
  • 1 medium onion, cut into strips .
  • 1 small green bell pepper, cut into strips .
  • 1/2 c medium salsa .
  • 1/2 tsp salt (used Kosher)

Directions
  • Step #1 Cut flank steak lengthwise in half, then crosswise into thin strips.
  • Step #2 Combine onion, garlic, cilantro, 1/2 c salsa, chili powder, lime juice, cumin & salt in crockpot/slow cooker (aka crockpot).
  • Step #3 Cover up; cook on LOW 5 to 6 hrs.
  • Step #4 Add bell peppers.
  • Step #5 Cover up; cook on LOW 1 hr.
  • Step #6 Serve with flour tortillas & extra salsa.
