White Bean Soup With Swiss Chard Recipe

Ingredients
  • 3 garlic cloves, minced .
  • 2 large onions, sliced (red & white) .
  • 1 tsp fresh coarse ground black pepper .
  • 3 tbsps fresh parsley, sliced .
  • 1/2 lb red swiss chard, ribs & leaves coarsely sliced .
  • 2-3 carrots, peeled & finely sliced .
  • 3 tbsps olive oil .
  • 5 c vegetable broth .
  • 8 oz great northern beans .
  • 1 bay leaf

Directions
  • Step #1 Place the beans In a large-ish pot & cover with water.
  • Step #2 Let them soak overnight.
  • Step #3 The next day, drain the beans, reserving 2 c of liquid.
  • Step #4 In a large pot, heat the oil.
  • Step #5 Add the onions & saute until tender, about 5 mins.
  • Step #6 Add the carrots & saute for an additonal 3 mins.
  • Step #7 Add the chard & cook this until wilted, about 3 mins.
  • Step #8 Add the broth, reserved bean liquid, beans, garlic & bay leaf.
  • Step #9 Partially cover & let simmer for 1-2 hrs, until beans are tender.
  • Step #10 Remove bay leaf.
  • Step #11 Puree half of the soup in a mixer.
  • Step #12 Return to pot with remaining soup.
  • Step #13 Add salt, pepper & parsley.
