Crab Stuffed Mushroom Caps Recipe

Ingredients
  • 1 (4 oz) can crabmeat, drained .
  • 2 tbsps fresh parsley, sliced .
  • 1 egg .
  • 2 tbsps onions, minced .
  • 1/4 tsp salt .
  • 1 tsp olive oil .
  • 2-3 drops hot pepper sauce .
  • 2 tbsps low-fat mayonnaise .
  • 2 tbsps unseasoned breadcrumbs .
  • 1/8 tsp black pepper .
  • 16 white mushrooms, large, with stems .
  • 1 tbsp parmesan cheese, grated

Directions
  • Step #1 Wash mushrooms & pat dry with paper towels.
  • Step #2 Pull out stems & mince all or most of the stems to make up 1 c.
  • Step #3 Set aside.
  • Step #4 Heat olive oil in a medium skillet over med-heat/flame.
  • Step #5 Add minced stems & onions.
  • Step #6 Cook & stir until vegetables are tender, about 3 - 4 mins.
  • Step #7 Be careful not to burn them.
  • Step #8 In a medium bowl, mix mushroom onion mixture with all regaining ingredients.
  • Step #9 Using a tsp, stuff mushrooms with filling, mounding on top.
  • Step #10 Arrange stuffed mushrooms in a single layer in a shallow baking pan.
  • Step #11 Bake at 400F for 15 mins.
  • Step #12 Let sit for 5 - 10 mins to cool.
  • Step #13 Serve hot or at about room temp.
