Creole Chicken Vegetable Stir Fry Recipe

Ingredients
  • 3 tsps cajun spices or creole seasoning .
  • 3 oz sliced bell peppers (yellow, orange, green, red) .
  • 1/4 tsp thyme .
  • 1 tbsp parsley .
  • 1 tbsp fat-free margarine .
  • 4 oz grape tomatoes, halved (about 20 tomatoes) .
  • 1 c canned okra, with juice .
  • 3/4 tsp Splenda sugar substitute .
  • 8 oz boneless skinless chicken breasts, cut into strips .
  • cooked brown rice .
  • 2 oz sliced celery (about 1/2 c)

Directions
  • Step #1 Spray skillet with non-stick spray.
  • Step #2 Add chicken & thyme & cook over med-heat/flame for 5-7 mins, until browned.
  • Step #3 Add peppers & celery & stir fry for 5 mins.
  • Step #4 Add okra, Cajun seasoning, tomatoes, & Splenda, & mix well.
  • Step #5 Bring to a boil.
  • Step #6 Reduce heat, cover, & let simmer for 5 mins.
  • Step #7 Uncover & cook for 3 more mins.
  • Step #8 Add margarine & parsley & mix well.
  • Step #9 Serve over hot rice.
