Beef Curry (oamc) Recipe

Ingredients
  • 8-12 tbsps oil (for cooking) .
  • 2 garlic cloves (crushed or minced) .
  • 1 tsp chili powder .
  • 1/2 c flour, seasoned with .
  • 1 onion (peeled & quartered & separate segments 1 c) .
  • 1 tsp sugar, I actually use 1/4 c lancanshire sauce but ZAAR won't accept .
  • 2 kg stewing beef (I use gravy or shin beef) .
  • 2 carrots (peeled & cut in chunks 1 c) .
  • 1/2 kg skirt steaks .
  • 1 tbsp mixed fresh herbs (extra, chop just before using) .
  • 1 tsp ginger .
  • 1 tsp cayenne pepper .
  • 1 tsp sugar .
  • 2 tbsps curry powder (I use Clive of India) .
  • 1/8 c worcestershire sauce, plus .
  • 1 (400 g) can sliced tomatoes (about 14 oz) .
  • 1 tbsp mixed fresh herbs (I use oregano, thyme & rosemary) .
  • 1 c beef stock (use beef granules + water) .
  • 1 potato (peeled & cut into small sliced pieces 1 1/4 c) .
  • 1 potato (peeled & cut into large sliced pieces 1 1/2 c) .
  • salt & pepper .
  • 1 sweet potato (peeled & sliced into large pieces 2 c) .
  • 2 tsps mustard powder

Directions
  • Step #1 Preheat oven to 150 degree C (300 degree F).
  • Step #2 Peel & dice vegetables.
  • Step #3 Mix curry powder, mustard powder & sugar together.
  • Step #4 Trim & dice meats into large bit size pieces.
  • Step #5 Coat meat with seasoned flour (best way I found is to put flour In a large-ish bowl & in batches put the meat in to be coated, shake of excess & cook that batch continue to all meat used).
  • Step #6 In a heavy duty pot (suitable for oven) put in oil (enough to cover bottom of pot) & over medium/high heat cook meat in batches to seal, set to one side, keep warm covered with alfoil wrap or use a casserole dish with lid.
  • Step #7 Wipe pot clean (to get rid of burnt flour).
  • Step #8 Heat 2 tablepoons oil over medium high heat, cook potatoes & sweet potatoe for 10 mins.
  • Step #9 Turn heat down to low.
  • Step #10 Remove potatoes with slotted spoon onto a plate & put to one side.
  • Step #11 Add more oil if required & turn heat up to medium/high & add onion & saute till soft.
  • Step #12 Turn heat to low.
  • Step #13 Remove with slotted spoon & add to potatoes.
  • Step #14 Over medium heat add curry powder, mustard powder & sugar mixture & the garlic cook till fragrant (about 1/2 to 1 min).
  • Step #15 Add vegetables to curry mixture & cook for 2 to 3 mins of medium/high heat.
  • Step #16 Now add the meat & mix well with the vegetables.
  • Step #17 Add carrot, tomatoes, beef stock, cayenne pepper, lancanshire (or worcestershire),fresh herbs, chilli powder & ginger powder.
  • Step #18 Mix well together.
  • Step #19 If meat & vegetables are not covered in liquid, top up with water & stir.
  • Step #20 Put lid on pot & put into oven for 3 - 4 hrs, till meat is tender, stirring occassionally.
  • Step #21 Just before serving add extra tbsp of fresh herbs (chop just before using).
  • Step #22 Serve with rice.
