Step #4 Trim & dice meats into large bit size pieces.
Step #5 Coat meat with seasoned flour (best way I found is to put flour In a large-ish bowl & in batches put the meat in to be coated, shake of excess & cook that batch continue to all meat used).
Step #6 In a heavy duty pot (suitable for oven) put in oil (enough to cover bottom of pot) & over medium/high heat cook meat in batches to seal, set to one side, keep warm covered with alfoil wrap or use a casserole dish with lid.
Step #7 Wipe pot clean (to get rid of burnt flour).
Step #8 Heat 2 tablepoons oil over medium high heat, cook potatoes & sweet potatoe for 10 mins.
Step #9 Turn heat down to low.
Step #10 Remove potatoes with slotted spoon onto a plate & put to one side.
Step #11 Add more oil if required & turn heat up to medium/high & add onion & saute till soft.
Step #12 Turn heat to low.
Step #13 Remove with slotted spoon & add to potatoes.
Step #14 Over medium heat add curry powder, mustard powder & sugar mixture & the garlic cook till fragrant (about 1/2 to 1 min).
Step #15 Add vegetables to curry mixture & cook for 2 to 3 mins of medium/high heat.
Step #16 Now add the meat & mix well with the vegetables.
