Spaghetti With Lemon, Parmesan & Peas Recipe

Ingredients
  • 1 tbsp sliced fresh flat leaf parsley .
  • 2 tsps olive oil .
  • 1 small onion, finely sliced .
  • 100 g low-fat soft cheese with chives & onions .
  • 140 g spaghetti .
  • 1 lemon, zest of, finely grated .
  • 3 tbsps finely grated parmesan cheese .
  • 100 g frozen petits pois or garden peas

Directions
  • Step #1 Bring a large pan of lightly salted water to the boil.
  • Step #2 Feed in the spaghetti & cook for about 10-12 mins, until just tender.
  • Step #3 Add the peas for the last 2-3 mins.
  • Step #4 At the same time, heat the olive oil in a saucepan & fry the onion carefully until softened & cooked, but not brown.
  • Step #5 Stir in the soft cheese & warm it through, adding 3 tbsp of the pasta cooking water to thin it down.
  • Step #6 Now stir in the the lemon zest & 2 tbsp of the Parmesan.
  • Step #7 Drain the spaghetti & peas really well, return them to the pan & carefully stir in the the sauce.
  • Step #8 Spice up with salt & pepper, then pile it into 2 serving bowls.
  • Step #9 Sprinkle top the parsley & the remaining Parmesan over the top & serve right away, with a mixed leaf salad.
